Homemade Tagalongs

Every year I go on the hunt for Girl Scouts.
As creepy as that may sound, don't act like you don't do the same thing or know what I'm talking about.
ONCE a year they come out of hiding and sell those delicious cookies at $2.50 a box (I buy 10!).

What do I do when it's the rest of the year and they are in hibernating again, preparing themselves for next year and the cookie crazy ladies who will swarm them? ie: me.

Well before this year I would have counted down the days until they set up shop at my local Publix. But this year? Oh no.
Count and wait no more!
I have a recipe to get me through the rest of the year!

I give you:

Homemade Tagalongs!


Ingredients:
2 Sticks (1 cup) unsalted butter at room temp
1 cup sugar
1 large egg
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
3 cups all-purpose flour
1/2 cup smooth peanut butter
1/2 cup confectioner's sugar
2 cups semi-sweet chocolate chips (I used the dipping chocolate that you can find in the baking section at your local grocer. It was much easier IMO)

1. In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar. Beat until smooth. Add in egg and beat until well mixed. Add in vanilla. Beat until smooth. With mixer on low, add in salt and flour. Mix until dough is uniformed. Shape dough into a cylinder with a diameter of about 2-3 inches. Wrap in parchment paper and freeze for at least 25 minutes.
If you're like me you want to make things as easy and less time consuming as possible. So the easiest way for me to do that was to take spoonfuls of dough and place them on the parchment paper that is already on the cookie sheet. Then press down until you get a circle or firm circle.

2. Preheat oven to 350 degrees. (I think I'm writing this backwards. You should probably preheat the over while making your mixture ha!) Bake the cookies for 8 minutes. Place on a cooling rack and let cool COMPLETELY.

3. While waiting for them to cool, mix together the peanut butter and powdered sugar. Form into small disks and press onto cookies (once cool of course). Melt chocolate in the microwave for 30 second intervals. Coat cookies completely in chocolate and life out with a fork. Place on parchment lined baking sheet and let set. Or again if you're like me then you want them stat so you can put them in the freezer to speed up the process :)


 
 
Now you can eat the whole batch or share with your coworkers/friends.

I might have to try a gluten free, casein free version of these b/c they sound damn good.
